Herb-Infused Roasted Turkey with RoxyAnn Claret
Ingredients
• 1 whole turkey (12 to 15 lbs)
• 4-5 springs of fresh herbs (rosemary, thyme, sage)
• 6 cloves of garlic, minced
• 1/4 cup olive oil
• Salt and pepper to taste
• 1 bottle of RoxyAnn Claret
Step 1
Preheat oven to 325°F
Step 2
Rinse and pat dry the turkey. Place it on a roasting rack in a roasting pan.
Step 3
In a bowl, mix minced garlic, chopped herbs, olive oil, salt, and pepper.
Step 4
Rub the herb mixture all over the turkey and pour a glass or two of RoxyAnn Claret into the bottom of the roasting pan.
Step 5
Roast the turkey in the oven, basting it with RoxyAnn Claret every 30 minutes for a moist and flavorful finish. Cook until the internal temperature reaches 165°F in the thickest part of the turkey. Usually about 13-15 minutes per pound.

Cranberry & RoxyAnn Viognier Compote
Ingredients
• 12 oz fresh cranberries
• 1 cup sugar
• Zest of 1 orange
• 1 cinnamon stick
• 1/2 cup RoxyAnn Viognier
Step 1
In a saucepan over medium heat, combine cranberries, sugar, orange zest, and a cinnamon stick.
Step 2
Cook, stirring occasionally, until the cranberries burst and the mixture thickens (about 10-15 minutes).
Step 3
Pour in RoxyAnn Viognier, reduce heat, and simmer for another 5 minutes.
Step 4
Remove the cinnamon stick and let the compote cool before serving.

Butternut Squash & RoxyAnn Tempranillo Soup
Ingredients
• 1 large butternut squash, peeled and cubed
• 1 onion, chopped
• 4 cups vegetable broth
• 1 cup RoxyAnn Tempranillo
• 1/2 cup cream or coconut milk (for a dairy-free option)
• Pinch of nutmeg
• Salt and pepper to taste
Step 1
In a large pot, sauté the chopped onion and butternut squash until softened.
Step 2
Add vegetable broth and RoxyAnn Tempranillo. Simmer until the squash is tender (about 20-25 minutes).
Step 3
Use an immersion blender or transfer to a blender to puree the soup until smooth.
Step 4
Stir in cream or coconut milk, nutmeg, salt, and pepper. Simmer for an additional 5 minutes before serving.

RoxyAnn Syrah-Infused Dark Chocolate Truffles
Ingredients
• 8 oz dark chocolate, chopped
• 1/2 cup heavy cream
• 2 tablespoons butter
• 1/4 cup RoxyAnn Syrah
• Cocoa powder (for coating)
Step 1
Heat the heavy cream in a saucepan until it just begins to boil.
Step 2
Pour the hot cream over the chopped dark chocolate and butter. Let it sit for a minute, then stir until smooth.
Step 3
Stir in RoxyAnn Syrah until well combined. Chill the mixture in the refrigerator until firm.
Step 4
Scoop small portions and roll them into balls, then coat each truffle in cocoa powder.
