Grilled Rosemary & Garlic Lamb Chops

8 lamb chops, about 1 inch thick

4 cloves garlic, minced

2 tablespoons fresh rosemary leaves, finely chopped

2 tablespoons olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

Directions:

  1. In a small bowl, combine the minced garlic, chopped rosemary, olive oil, and balsamic vinegar. Mix well to create the marinade.
  2. Place the lamb chops in a shallow dish or resealable plastic bag. Pour the marinade over the lamb chops, making sure they are evenly coated. Cover the dish or seal the bag and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat your grill to medium-high heat.
  4. Remove the lamb chops from the marinade and discard any excess marinade.
  5. Season the lamb chops with salt and pepper to taste.
  6. Place the lamb chops on the preheated grill and cook for 3-4 minutes per side for medium-rare, or until desired doneness is reached.
  7. Remove the lamb chops from the grill and let them rest for a few minutes before serving.
